Homemade Marshmallows

Here is a YUMMY & easy recipe to BLESS your family with some ooey gooey fun! From my house to YOUR house...

Ingredients:

3 packages unflavored gelatin
1 cup ice cold water, but you will need it in two 1/2 cup measurements
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon kosher salt
2 teaspoons vanilla extract
1/2 cup powdered sugar
1/2 cup cornstarch
Nonstick spray
9x13 Glass or Metal pan
Rubber Spatula
Candy or Cooking Thermometer

Lets get started....

1. You will need to mix together your cornstartch and powdered sugar, then set aside for later.




2. Open up your three packets of gelatin and place then into your ELECTRIC mixer with 1/2 cup COLD water.



3. Then on the stovetop get a pan and pour in remaining 1/2 cup cold water, 1 1/2 cups of granulated sugar, & 1 cup of corn syrup on medium heat for two minutes. Be sure to attach your candy thermometer on now so that you won't burn yourself putting it on the pan later....





4. Turn up the heat to high and bring the temperature up to 250 degrees, approx 8 minutes. Stir Constantly!!!



5. Immediately after the mixture hits 250 degrees, turn the mixer onto a LOW speed with the water & gelatin already in it, and carefully add the hot pan syrup into the mixer.

**(TIP: the gelatin REALLY smells right at first but that smell will diminish soon).

As soon as it is all in there turn the speed up to high and beat for 12 minutes, YES 12! * While mixer is beating you have to prepare your spatula and 9x13 dish, no bathroom breaks in this recipe!




6. Get your non-stick spray and completely COVER your rubber spatula & 9x13 dish. Then 1/2 of the sift corn starch & powdered sugar mixture into your dish.



7. At 12 minutes turn mixer speed down to LOW and Add your 2 tsp of Vanilla, then turn the mixer back up to high for another minute. Your mixture should now look WHITE & fluffy.



8. Now really quickly get your fluff into the 9x13 coated dish quickly as possible. As simple as possible try to get to completely cover all of the corners of the dish. Then sift remaining Corn Starch & Powdered Sugar mixture onto top of Marshmallows.



9. Now pat mixture down and around with clean DRY hands.



10. Immediately get your pots pans & mixer into the sink with hot water & soap or clean up could be a disaster!



11. Cover the Marshmallows and set aside room temperature for at LEAST 4 hours.

12. After 4 hours, Turn your marshmallows out of the 9x13 dish onto a LARGE cutting board, cover a pizza wheel with some remaining powdered mixture and cut through to make desired size of marshmallows. I like mine BIG..... But you can cut your as large or as small as you would like. You can even use COOKIE CUTTERS to make shapes... Stars or Hearts, use your imagination!

13. Then there you have it.... ENJOY your Homemade Marshmallows!



14. Store the Marshmallows in an AIRTIGHT container or Freezer Bag for up to 3 weeks, but they won't be around that long anyways!

15. Get creative next time, add some Coconut, Strawberry, Peppermint, or Caramel Extract... You could even cover the tops with crushed peppermints, or sprinkles for FUN, the sky is the limit.
